After honing his craft in a classic French bistro, Michael spent two years cooking with Robin Gill and the Dairy team, developing bold, ingredient-led style he's known today.

He went on to become Head Chef at the critically acclaimed 64 Degrees in Brighton, earing widespread praise for his inventive, refined approach to modern dining.

Most recently, he delivered a standout  semi-final performance on MasterChef: The Professionals, cementing his reputation as one of the UK's most exciting chefs. 

 

This New Year's Eve, Michael returns to the family for a special takeover at Bottle+Rye, serving a celebratory menu that tips its hat to his French classical roots while showcasing the creativity and precision that define cooking.
